This component is exactly what I am looking for, and i wish I thought of using and search for this before, but because I didn't, I have 3 sites already up.

How easy is for me do this with sites that are already up and running with folk on them, such as forums and users?

If you want to move existing "standalone" website as slave site under JMS, this is possible and require a manual procedure that consists in installing every extensions used by your current standalone website into the master website.
When this is done, this mean that you could re-use the current DB with the new joomla environment.
Perhaps you will also have to change some configuration files to reflect the new directory path and perhaps also reconfigure some extensions for the slave site.

So this is possible to move existing standalone website as slave site but this require some manual operations.
