In my template when testing I have checked share K2. So accidentally, my client called and said when another person was editing their site in K2, it changed all of her information in her site to match the other. K2 sharing is enabled. K2 is only used on 2 pages of her site and the rest is done.

How do I unshare a component without having to delete the site and remake it again from scratch? A lot of work has already been done on these sites.

You can go in the JMS tools and "uninstall" the shared extension.
When done, you can re-install it (not share it).

By security, performe a backup before you uninstall / re-install.
