Thanks, I was seeing that it changes the email and the password of the admin (Super admin) but I really wanted to restrict them from being a super admin just in case they know Joomla and might know what they're doing.

I went ahead and disabled all the new admin password, email, etc. fromt he create new site menuitem settings and just wrote a plugin that will duplicate the logged in user to the new database, and table and it works great. This still gives me the ability to login to any slave site so that might be able to help them and not have to ask them their password they created when making the site to get into or resetting it.
